One week: production against demand How this mechanism runs for a business in this sector, step by step.

Sectors · Food & beverage

“On Friday we bin it. On Monday there isn’t enough.”

AI for food and beverage manufacturing

from €4,900 · preset: food & beverage

In 2025, food manufacturers in Europe were three times as likely to use AI as those in Greece.

Firms using AI

source (opens in a new tab)Eurostat, AI use by sector (isoc_eb_ain2), 2025 · official statistics · firms with 10+ staff · food, beverages, tobacco (NACE C10–C12)

In 2024 Greece stood at 9.75%, above the EU’s 6.79%. Sector figures swing from year to year: read the trend, not the decimal. For manufacturing as a whole, 7.77% against 17.27% (2025).

Milk, bread, juice: anything with a short shelf life makes every forecasting error expensive. The heatwave, Easter, the supermarket promotion and May’s first tourists are data. They can go into the production plan before 17:00.

We work from the Almyros industrial area and Heraklion, close to the food plants of Thessaly and Crete.

The invisible

Four sentences from every food plant.

Loss in food has a best-before date. Whatever isn’t measured today gets binned on Friday.

The right quantity inside. The right story outside.

On the left, what makes production match demand and the label match the lot. On the right, what lets a buyer abroad know where their product comes from.

The formula

Hidden hours/month = inspection hours × 4.33 + audit hours ÷ 12. Returns cost/year = returns × cost × 12, added as external cost.

Cost/year = hidden hours/month × 12 × hourly cost (+ external cost, where there is one). Automatable = labour cost × department coefficient (0.30–0.60) + external cost × a second coefficient. People = hidden hours/month × coefficient ÷ 150 hours. Payback = pilot cost ÷ (automatable ÷ 12).

The coefficients are our own conservative estimate, shown here so you can challenge them. 150 hours is one person's productive time in a month (≈1,800 a year).

“34 °C today. I drank a little in the night. My olives are filling out.” An olive tree in Crete writes to its customer in Munich.

Replies are built from templates filled with live weather data, not from a free-running model. The tree says it’s an AI persona.

Questions

What does AI do in a food plant?

It forecasts demand per SKU using weather, holidays and promotions, so production matches orders. It reads dates and lots with a camera, keeps HACCP records without paper, predicts failures on the filling line, and moves orders from Viber into the ERP.

How much data does demand forecasting need?

Usually two years of sales per SKU and customer from the ERP, plus the promotions calendar. We add the weather and holidays. If there’s less history, we say so in the X-Ray and start with the SKUs that waste the most.

Will the camera replace the quality inspector?

No. The camera reads every label, which no person can do for a whole shift. Doubtful units go to the inspector, who decides. Their time goes where judgement is needed, not into staring at thousands of identical lids.

Does it work with our ERP and the retailers we already serve?

Yes. We connect to your ERP, such as SoftOne, Entersoft or Epsilon, to myDATA, and to whatever the retailers send: email, portals, Viber. We don’t ask them to order differently. We change what happens next.

Where do we start?

With the Plant X-Ray: ten working days with a stopwatch, sales and waste data, quality records and a camera test on one line. You get a map of hours, kilos and euros, and we start with whatever pays back first.
